The tuna is sourced from local Azorean boats using pole-and-line fishing. Each fish is caught individually before being landed and prepared locally. At the São Jorge cannery, the team works by hand from whole tuna, producing defined steak-style pieces with a fuller texture than shredded or flaked tuna.

The skipjack steaks are preserved in first cold-pressed extra virgin olive oil from organic agriculture with a small amount of salt. This gives the fish a rounded, savoury flavour and helps maintain a succulent texture. The tuna can be drained where a drier consistency is needed, but the seasoned oil is also suitable for stirring through pasta, spooning over vegetables or blending into salad dressings.

The six separate triple packs make the larger bundle easier to organise in the cupboard and allow the product to be divided between different storage areas or households. Each individual steel tin has a ring-pull lid and is supplied within the branded cardboard triple-pack format.

Use the steaks in Mediterranean salads, tuna and bean dishes, pasta sauces, filled baguettes or sharing platters. They can also be combined with breadcrumbs, herbs and egg for fishcakes, although gently breaking the pieces rather than heavily mashing them will preserve more of the tuna’s characteristic texture.
