Clearspring Organic Tamari Double Strength 500ml is a traditionally fermented Japanese soya sauce with a rich, full-bodied flavour and deep umami character. Also known as Clearspring Organic Japanese Yaemon Tamari, this award-winning double-strength tamari is made with a particularly high proportion of organic whole soya beans for a concentrated yet balanced savoury taste.

The recipe contains 52% organic soya beans alongside water, sea salt and organic mirin made from sweet rice and cultured rice. Unlike conventional soya sauces that commonly contain wheat, this tamari is wheat free and gluten free, while its high soya bean content gives it a smooth, complex flavour that can be used sparingly to add depth to a wide variety of dishes.

Produced in Japan using a traditional recipe and time-honoured methods, the tamari is naturally fermented and aged in cedarwood kegs over two summers. Clearspring's producer uses approximately twice as many soya beans for each bottle as ordinary soya sauces, creating the distinctive double-strength character and intense umami flavour associated with this tamari.

Clearspring Organic Tamari is particularly well suited as a dipping sauce for sushi and sashimi, tofu, dumplings and vegetables. Just a few drops can also enhance soups, broths, stir-fries, noodles, grains and cooked vegetable dishes, while its concentrated flavour makes it useful for adding savoury depth to marinades, sauces and homemade dressings.

For cooking, add the tamari towards the final few minutes where possible to help retain its more delicate fermented flavour. It can also be combined with ingredients such as ginger, garlic, sesame oil, rice vinegar or citrus to create simple Japanese-inspired dressings, dipping sauces and marinades.
