Use Steenbergs Black Cardamon Spice 30g to flavour pilafs, curries, dals and slow-cooked meats. The pods perfume oils and stocks beautifully; a little goes a long way, complementing cloves, cinnamon and bay.
Lightly bruise pods before adding to hot oil or braises, then remove before serving. For a subtler touch, infuse in rice or chai and strain out the pods.
