This traditionally brewed Japanese soya sauce is naturally fermented in cedarwood kegs and aged slowly over two summers. The extended fermentation gives the sauce its full-bodied flavour and distinctive aroma, making just a few drops enough to transform soups, sauces, dressings and cooked dishes.
